Is it an omelette? Is it scrambled eggs? No idea, but it’s quick to make and is good for using up scraps.

Pretty much all the ingredients can be substituted for anything vaguely similar and it will still turn out edible. Quantities are very approximate, too.

Ingredients
  • 4 cups of any of the following:
    • Capsicum (any colour) (cubed)
    • Carrot (grated)
    • Dark leafy greens (chopped)1
    • Fresh beetroot
    • Mushrooms (fresh, any type) (sliced)
    • Onion (diced)
    • Spring Onion (sliced)
    • Tomato (cubed)
    • Zucchini (grated)2
  • 1/2 cups of any of the following (optional):
    • Cheddar cheese (grated)
    • Feta cheese (cubed)
    • Sun-dried tomato (sliced)
  • 4 Eggs
  • 1/2 cups Flour3
  • 1/2 cups Milk or milk substitute (optional)
  • Sunflower oil4
  • 1 Tbsp Psyllium husks5
Method
  1. Mix all ingredients in a bowl.
  2. Heat a pan to medium-high heat.
  3. Add a small amount of oil to the pan - just enough that there's a film over the entire bottom of the pan.
  4. Add enough of the mixture to cover the pan in an approximately 1-1.5cm thick layer. If there's too much mixture, cook in multiple batches.
  5. Flip the omelette thing upside-down once it's light brown underneath. Typically this takes 5-7 minutes.
  6. Remove from the pan once the other side is light brown as well. This will be a bit quicker than the first side.
Storage
Place in an airtight container and refrigerate for up to several days. Reheat in microwave or pan.
Notes
  1. Rocket, spinach, baby spinach, silverbeet etc all work. Estimate quantity based on what it would be if packed tightly.
  2. Avoid adding more than 50% zucchini as it may end up soggy.
  3. Any type of flour will work here, it just helps stick things together a bit better. I typically use brown rice flour. Maybe avoid self-raising (or not - I haven't tried, maybe it's good!)...
  4. Other high-temperature oils can work here too such as grapeseed oil.
  5. Psyllium husks are quite good at helping everything stick together. Adding a little extra can help improve this, but too much will give an unusual texture.
